Going blank in an exam on material you knew an hour earlier is not a memory failure and it is not a character failure. It is what happens when the conditions of retrieval change, and it responds to changing your preparation far more than to trying to calm down.

Why the blank happens
Most revision happens in circumstances nothing like the exam: notes within reach, no clock, no consequence, and the option to look something up the moment recall stalls. That builds a version of knowing that depends on those circumstances being available.
Take them away and what is left is a gap that feels like forgetting. The material is usually still there — what is missing is practice at producing it cold, and the shock of that gap is what the anxiety feeds on.

If you go blank on a question, leave it and move on rather than staying and pushing. Retrieval that is not coming usually comes back once the pressure moves elsewhere, and the minutes spent staring are minutes taken from questions you can answer.
Slow breathing out for longer than in, for about a minute, measurably lowers physical arousal. It is not a cure and it is enough to get a pen moving.
What makes it worse
Cramming the night before, which adds material you will not secure and removes the sleep that recall depends on. Discussing the paper with people at the door, which reliably manufactures doubt about answers you had already decided. And caffeine beyond your normal amount, which produces exactly the physical signature — fast heart, tight chest, shallow breath — that the mind reads back as alarm.
